I know, I know. It’s been ages since I’ve posted literally anything here and you are probably wondering if I am permanently vacating in Hawaii or something. No, not really but my reason is good for taking so long.
It’s not Hawaii and I certainly don’t go around in a swimsuit and a surfboard, rather scarfs and jackets to say the least. No, I am in Southampton, Hampshire United Kingdom and I am here to get my Masters degree in Web Science. As you very well might understand I’ve been quite busy moving here and wrapping my head around the whole University life again. I got one thing to tell you, not having my own kitchen due to living in student accommodation is the worst nightmare of them all, but it ain’t gonna stop me. Nothing does when this one sets her mind to something.
In a nutshell, my course is amazing and I absolutely enjoy it, my colleagues are all lovely and I’ve made the most amazing group of friends. Plus I am back in the UK and let’s face it, I missed it, it missed me, we missed each other, we had to reunite.
I have been taking a load of pictures since I got here and before I start showing them off let me just tell you real quick what went down since I last wrote to you.
i. As you will notice the blog had a name change and where you subscribed, ‘Maple and Cherry Blossom’ has become ‘Duchess of Maple’, so from now on if you want to access the blog you use this link: www.duchessofmaple.com. Easier to remember, shorter, more accessible and more suitable.
ii. I moved from Cyprus to the UK and traded my job for becoming a student once again.
iii. I think I had my first hangover. Ever!
iv. I now live like a crazy person that can’t stay home for a reasonable amount of time hence failing to watch my long list of TV shows. If we take out the lack of baking here this pretty much kills me the most and it’s peak season for shows because almost all of them re-start.
v. I have not given up baking meanwhile, I just didn’t have something good looking in pictures to post but here are a few things I’ve made over the past month or so:
Nutella and Oreo Cheesecake
Peanut Butter and Nutella Chocolate Chip Cookie Pie
A load of cookies with pink sprinkles and hearts on them
Honey cake. This last one is a heaven’s call but one picture doesn’t cut it for a whole post does it?
Now then, I must admit something, a hurricane sort of hit when I first came here and all sorts of bad thoughts were circling me on whether I did good after being back home for 4 years and most of them as a full time employee! Long story short, I did, and I have my lovely flatmate to thank for helping me remember that and some of my bestest friends for enduring my initial almost breakdown. Funny story how I met my flatmate btw, she is also Cypriot and turns out we went to the same school too, anyhow I kinda caught her by surprise because I heard her talk Greek in the corridor of our flat the first day I came here. Next day on the verge of my moodiness I heard her talk again and I simply went and knocked on her room door to introduce myself and tell her Hi, I am here! Been together every day ever since along with a few other lovely and crazy people in addition. Amazing times!
Okay this was also another thing that got me to my senses, let’s give some credit to my window view here
And some more
Perfect isn’t it?
Now let me take you a little bit around Southampton’s scenery before I close here and hold on to your horses, she will bake for you in Southampton too so be alert for a recipe soon. I mean the number of ingredients I have available here people is beyond imagination and I already got the baking essentials despite the fact that I really need to go purchase some warm clothes urgently. But, priorities!!!!!
Here are a few images from walking in the lovely parks of Southampton.
The marina down at the docks.
And a few from my uni campus.
Charming sample of my surroundings wouldn’t you say?
Right and because you know I like to get a little philosophical here and there. Well and because my degree tends to lean that way at times too I just want to put out there people that, all those quotes about living your life the best way you can, seizing the day and following your dreams were not inspired in vague. Change is scary, no matter how certain you are about a decision, you can never know what the outcome will be unless you act on it. And it doesn’t always work the way we want it, such is life. There are times however where it does, it truly does and fear or uncertainty get in the way leaving us with doubts of our own decisions, our own chosen paths, our own destinies. Believe in yourself, dare and don’t always play it safe with life, let new things emerge and take leaps of faith. They make life interesting and at the end of the day a whole lot better. If you want to do something, do something and then just go with it. Right or wrong who gives a damn? The only thing that matters is what Frank Sinatra used to sing. That whatever you do in this life you do it your way and that at the end of each day you get to sit back and say what I did ‘I did it my way’.
