Remember that White Chocolate Hazelnut Cream / Kinder Bueno I’ve been bubbling about last week I want to use for cookies? Well behold the long awaited cookies. I call these Kinder Bueno stuffed Chocolate Chip Cookies and when I say stuffed I mean they are really overloaded. I don’t know which covers more surface the cookie or the filling? You tell me.
The past couple of weeks has been super as one of my dearest friends is back in Cyprus on holiday for a couple of weeks and we were taking every possible advantage to do a lot in the days she had here. That and everything else going on this period makes me wonder where did I sign up for a June so busy?
A Checklist of the past weeks

- Eat these cookies
- Attend a best friend’s graduation and take these cookies as a present (Because I mean which cookie doesn’t beat a bouquet of flowers, right?)
- Watch the two most amazing Game of Thrones episodes ever (Jon getting hotter as he goes) and I literally mean ever, I mean the world was prepared to be shocked but never in a thousand years did anyone imagine we would also be happy about it.
- Panic over ‘Brexit’, I mean seriously panic.
- Eat a ton of food and drink half a ton of beer
- Start ‘Orange is the New Black’, seriously love it, and distract myself from the rest of the world
Busy week, like I said but a girl’s gotta do what a girl’s gotta do. And a girl’s gotta also bake some good cookies.
Now let me tell you about these lovely and overfilled delights. The cookie itself is slightly crispy on the outside and soft on the inside with a nice butter and chocolate taste. It comes with the surprise of a thick white chocolate hazelnut cream layer that has a bite to its own, but the kind of melt in your mouth amazing bite.
People this is one big cookie and can’t promise that your stomach will be same time ready for a second one unless its anything like mine which ignores the full tummy signals and just keeps on asking. I can promise that you will definitely want seconds and thirds though.
I can also promise you that these cookies are so good that you won’t even swallow before you realise that. My friend who was graduating, his lovely girlfriend and his parents all went substantially crazy over them and I did not expect such reactions. I knew they would like them but I think they were in a state of altering universe when they had them which kind of made me blush and feel special listening to them. Ah, the power of baking! They told me these were the best cookies I personally ever made and that they’ve ever had in their entire lives. That’s me against a decent number of top-quality bakeries in Cyprus, and we Cypriots love our bakeries.
I like one in particular so much in the capital that I could move to the city just for that. It’s called Vienna and has several shops in Nicosia. They make amazing donuts with out of this world flavours (Kinder Bueno flavour included), very good desserts and pastries and my all-time favourite goodie of them is a mini pastry with chicken and cream cheese which I must have everytime I visit there.
I am getting side-tracked so I’ll put a stop here and let us move on about our cookies. If you recall from my Nutella & PB stuffed cookies the method for stuffing them is simple. Make and chill the dough, make and freeze the filling, portion out dough, flatten, fill and seal.
Et voila, cookies to feast the eyes, and then some.
I just love those specs of vanilla showing out from the filling. The chocolate chips are subtly there like a quiet surprise and the wonderful filling just makes you want to bite and bite again. It literally melts and sticks on your palate and that’s a good thing.
I think the only thing missing from making this cookie a full on Kinder Bueno experience is a touch of dark chocolate on top and some crushed wafers maybe mixed in the filling. That’s for you to experiment however 🙂
