Life can be so challenging sometimes on people, giving them no chance to fight back. They come to think of why, how, when and what the hell before they prepare themselves to act upon a challenge. And often people get defeated, not because they weren’t strong enough or because they took the wrong decisions but out of a series of unfortunate events. In situations like these no matter the cause you can only do so much for you or those affected. You can face them and try your best to recover or you can be there for someone.
Now there are those occasions where the only thing you can do for that someone is bake! Bake because he happens to have just completed his bachelors degree and he is about to graduate. He also happens to be kind of in love with Nutella and Peanut Butter, to the point where I have to leave the room and let them all be. Who can argue that this duo is strong enough to touch even the strongest among men. Think of the duo trying to escape the walls of a soft and thick chocolate chip cookie.
It looks something like this. A gooey mess of chocolate, nut butters and lovely cookie dough. Doesn’t that just make everything 10 times better?
Stuffing baked goods with ingredients that have a runny consistency can be a pain and often results in messy situations and unwanted results. However it is not impossible to do so and if so many out there succeeded then believe me there is a way.
I think you must be accustomed by far to making cookie dough with me. And this time we are using a regular chocolate chip cookie dough with milk chocolate chips. Despite the fact that I used pieces of chocolate that I’ve cut out myself and not ready made chocolate chips I called this recipe mentioning chocolate chips. The reason for that is that today we want to emphasize on the goodness inside the cookie hence it doesn’t matter what you choose to put in your dough. You can even decide to bake these with a dough recipe you love the most. Chips or chunks won’t hurt at all, long as you make sure your chocolate is a good quality brand.
The secret to stuff your cookie dough is simple. Freeze the runny stuffing so it wont be runny anymore.
You need something solid if you are going to stuff a cookie and make that stuffing stay in place. What I did for this cookie is mix equal amounts of Peanut Butter and Nutella in a bowl and then used these mini cupcake liners or truffle liners as we call them in Cyprus to pour in a teaspoon of the mixture in each one and put them straight in the freezer. I left them in the freezer overnight but you can let them for several hours or until you are sure they harden like a piece of chocolate.
When they freeze and are ready to use you simply take out some of the cookie dough and flatten it in your hand, put the now hard piece of Nutella and Peanut Butter in the middle of the dough and wrap the remaining dough around it to cover it completely.
Line them on your baking trays keeping a good amount of distance between each other.
And bake for 13-15 minutes or until the edges are really golden brown.

They are big, thick, soft, with chocolate chips and a huge surprise inside.
You know you want one now just to make this. Or rather break this.
I don’t even know where to start describing from. I think I was at a loss for words literally and mentally when I first tried them. Same thing happened the second time. When you take them out the oven and split them to this runny delight you simply want to swim in it. Let this sit a bit at room temperature and as it cools down things are gonna start getting better and better. Can anyone spot the chocolate chip streaks that leaked in the filling? What a beauty!
The next day they, cookies will be even better because they will sit and take time to blend well with the filling hence taste will be developed even further.
I packed 9 of these for one my closest friends whom these were created for, so thank him for this delightful idea of mine. I think he was more anxious to get hands on these cookies than do anything else that day. And we were about to watch a Game of Thrones episode which is on it’s own something to anticipate. I think we lost my friend for a little while there while he was attacking his little treats. He tried to speak in between bites to let me know these are the best cookies that I made and that he ever had in his life. Well that should mean something cause he eats a lot of cookies. We are in general a gang of friends who eats a lot of cookies.
